Sticky Sesame Tofu & Veggie Stir-Fry (Vegan + Gluten-Free)

🧄 Ingredients:
For the Tofu:

1 block firm tofu (tokua), pressed and cubed

2 tbsp cornstarch (for crispiness)

1 tbsp olive oil (or any neutral oil)
For the Sauce (Gluten-Free & Vegan):

3 tbsp tamari (gluten-free soy sauce substitute)

1 tbsp maple syrup or agave
-
1 tsp toasted sesame oil
-
1 tsp rice vinegar
-
2 tsp grated ginger
-
1 garlic clove, minced
-
1 tbsp cornstarch + 2 tbsp water (for thickening)
Veggies (feel free to swap!):

1 cup broccoli florets
-
1 red bell pepper, sliced
-
½ cup shredded carrots
-
½ cup snap peas or green beans
Garnish:

Toasted sesame seeds

Sliced green onions
-
Cooked brown rice or quinoa
🔪 Instructions:

Prepare the Tofu:

Press tofu for at least 15 minutes to remove excess water.

Cut into cubes and toss in cornstarch.

Pan-fry or air-fry with olive oil until crispy golden brown on all sides. Set aside.

Make the Sauce:

In a bowl, mix tamari, maple syrup, sesame oil, rice vinegar, ginger, and garlic.

Stir in the cornstarch slurry (1 tbsp cornstarch + 2 tbsp water).

Stir-Fry the Veggies:

In a large pan or wok, sauté veggies in a splash of water or oil for 4–5 minutes until vibrant and slightly tender.

Combine:

Add the crispy tofu back into the pan.

Pour the sauce over and toss everything until coated and sticky. Simmer 2–3 minutes until sauce thickens.

Serve hot over quinoa or brown rice. Top with sesame seeds and green onions.
