                            Sticky Sesame Tofu & Veggie Stir-Fry (Vegan + Gluten-Free)

🧄 Ingredients:

For the Tofu:

  • 1 block firm tofu (tokua), pressed and cubed

  • 2 tbsp cornstarch (for crispiness)

  • 1 tbsp olive oil (or any neutral oil)

For the Sauce (Gluten-Free & Vegan):

  • 3 tbsp tamari (gluten-free soy sauce substitute)

  • 1 tbsp maple syrup or agave

  • 1 tsp toasted sesame oil

  • 1 tsp rice vinegar

  • 2 tsp grated ginger

  • 1 garlic clove, minced

  • 1 tbsp cornstarch + 2 tbsp water (for thickening)

Veggies (feel free to swap!):

  • 1 cup broccoli florets

  • 1 red bell pepper, sliced

  • ½ cup shredded carrots

  • ½ cup snap peas or green beans

Garnish:

  • Toasted sesame seeds

  • Sliced green onions

  • Cooked brown rice or quinoa


🔪 Instructions:

  1. Prepare the Tofu:

    • Press tofu for at least 15 minutes to remove excess water.

    • Cut into cubes and toss in cornstarch.

    • Pan-fry or air-fry with olive oil until crispy golden brown on all sides. Set aside.

  2. Make the Sauce:

    • In a bowl, mix tamari, maple syrup, sesame oil, rice vinegar, ginger, and garlic.

    • Stir in the cornstarch slurry (1 tbsp cornstarch + 2 tbsp water).

  3. Stir-Fry the Veggies:

    • In a large pan or wok, sauté veggies in a splash of water or oil for 4–5 minutes until vibrant and slightly tender.

  4. Combine:

    • Add the crispy tofu back into the pan.

    • Pour the sauce over and toss everything until coated and sticky. Simmer 2–3 minutes until sauce thickens.

  5. Serve:

    • Serve hot over quinoa or brown rice. Top with sesame seeds and green onions.
