 Stir-Fried Tofu & Veggie Noodles


Prep Time: 25 mins | Serves: 2

Ingredients:

  • 100g firm tofu, cubed

  • 1 cup cooked soba noodles (or rice noodles)

  • ½ cup bell peppers, sliced

  • ¼ cup carrots, julienned

  • 1 tbsp soy sauce or tamari

  • 1 tsp sesame oil

  • 1 garlic clove, minced

  • Spring onions or sesame seeds to garnish

Instructions:

  1. Sauté tofu until golden, then remove.

  2. Stir-fry veggies in sesame oil with garlic.

  3. Add cooked noodles, tofu, and soy sauce. Mix well.

  4. Garnish and serve warm.
