🥗 Ingredients:

  • 1 cup broccoli florets

  • 1/2 cup sliced carrots

  • 1/2 cup bell peppers (mixed colors, sliced)

  • 1/2 cup zucchini, sliced

  • 1/2 cup baby spinach

  • 1/2 cup cooked quinoa or brown rice

  • 1 tbsp olive oil or coconut oil

  • 2 cloves garlic, minced

  • 1 tbsp low-sodium soy sauce or liquid aminos

  • Optional: sesame seeds, chili flakes, or lemon juice for garnish


🔥 Instructions:

  1. Heat oil in a large pan or wok over medium heat.

  2. Add garlic and sauté for 30 seconds until fragrant.

  3. Add broccoli and carrots first (they take longer to cook), stir-fry for 3-4 minutes.

  4. Toss in zucchini and bell peppers, stir-fry another 3-4 minutes until tender-crisp.

  5. Add spinach and stir until wilted (1 minute).

  6. Drizzle with soy sauce or liquid aminos, and mix well.

  7. Serve hot over quinoa or brown rice.

  8. Garnish with sesame seeds or a squeeze of lemon for an extra zing.
