Spicy Tofu & Chickpea Stir-Fry

🛒 Ingredients:

  • 1 block firm tofu (pressed & cubed)

  • 1 can chickpeas (drained & rinsed)

  • 2 tbsp soy sauce or tamari

  • 1 tbsp sriracha (adjust to your spice level)

  • 1 tbsp tomato paste

  • 1 tbsp sesame oil or vegetable oil

  • 1 tsp garlic (minced)

  • 1 tsp ginger (grated)

  • 1 small onion (sliced)

  • 1 cup bell peppers (mixed colors, sliced)

  • 1/2 cup grated carrots

  • 1 tbsp maple syrup or brown sugar

  • Cooked rice or noodles (for serving)

  • Chopped green onions & sesame seeds (optional garnish)


🍳 Instructions:

  1. Crisp the tofu:
    In a pan over medium heat, add a splash of oil and pan-fry tofu until golden and crispy on all sides. Set aside.

  2. Make the sauce:
    In a bowl, mix soy sauce, sriracha, tomato paste, maple syrup, garlic, and ginger.

  3. Sauté veggies:
    In the same pan, stir-fry onion, bell peppers, and carrots for 4–5 minutes.

  4. Combine & simmer:
    Add chickpeas and cooked tofu to the pan. Pour in the sauce. Stir well and let simmer for 5 minutes so the tofu and chickpeas absorb the flavors.

  5. Serve hot over steamed rice or noodles. Garnish with green onions and sesame seeds.
