Spicy Tofu & Chickpea Stir-Fry

🛒 Ingredients:

1 block firm tofu (pressed & cubed)

1 can chickpeas (drained & rinsed)

2 tbsp soy sauce or tamari

1 tbsp sriracha (adjust to your spice level)

1 tbsp tomato paste

1 tbsp sesame oil or vegetable oil

1 tsp garlic (minced)
-
1 tsp ginger (grated)

1 small onion (sliced)
-
1 cup bell peppers (mixed colors, sliced)

1/2 cup grated carrots
-
1 tbsp maple syrup or brown sugar
-
Cooked rice or noodles (for serving)

Chopped green onions & sesame seeds (optional garnish)
🍳 Instructions:

Crisp the tofu:
In a pan over medium heat, add a splash of oil and pan-fry tofu until golden and crispy on all sides. Set aside. -
Make the sauce:
In a bowl, mix soy sauce, sriracha, tomato paste, maple syrup, garlic, and ginger. -
Sauté veggies:
In the same pan, stir-fry onion, bell peppers, and carrots for 4–5 minutes. -
Combine & simmer:
Add chickpeas and cooked tofu to the pan. Pour in the sauce. Stir well and let simmer for 5 minutes so the tofu and chickpeas absorb the flavors. -
Serve hot over steamed rice or noodles. Garnish with green onions and sesame seeds.
