Spicy Vegan Corned "Beef" à la Delicioso

🥘 Ingredients:

  • 1 ½ cups jackfruit (canned in water or brined, drained & shredded)

  • 1 ½ cups cooked lentils or TVP

  • 1 small red beet (grated – for color & earthiness)

  • 1 tbsp olive oil or vegan butter

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 1 tbsp soy sauce or tamari

  • 2 tsp smoked paprika

  • 1 tsp chili flakes

  • 1 tsp ground coriander

  • ½ tsp ground cloves

  • 1 tbsp maple syrup

  • 1 tbsp apple cider vinegar

  • Salt & black pepper to taste


🔥 Optional Add-On:

  • 1 tsp liquid smoke for that authentic cured flavor


🍳 Instructions:

  1. Sauté the base: In a large pan, heat oil. Cook onion and garlic until soft.

  2. Add flavor: Stir in shredded jackfruit, lentils or TVP, grated beet, soy sauce, spices, maple syrup, and vinegar.

  3. Simmer and sear: Cook uncovered for 10–15 mins, stirring occasionally until caramelized and tender.

  4. Optional: Use a fork to “shred” the jackfruit more while cooking to get that stringy corned beef texture.

  5. Serve hot: Great over rice, in sandwiches, tacos, or breakfast hash!
