Grilled Veggie & Halloumi Power Bowl

🌿 Ingredients:

1 cup cooked quinoa or couscous

1 zucchini, sliced
-
1 red bell pepper, sliced
-
1 small eggplant, sliced
-
1 carrot, julienned
-
100g halloumi cheese, sliced

2 tbsp olive oil
-
1 tsp paprika
-
Salt & black pepper to taste
-
Fresh parsley for garnish
-
Optional: hummus or tahini drizzle
🔥 Instructions:

Preheat grill or pan over medium heat.

Toss zucchini, bell pepper, eggplant, and carrot in olive oil, paprika, salt, and pepper.

Grill or pan-fry veggies for 5–7 minutes until tender and slightly charred.

In the same pan, grill halloumi slices until golden on each side.

Assemble bowl: layer quinoa at the base, top with grilled veggies and halloumi.

Drizzle with tahini or add a spoonful of hummus. Garnish with parsley.
