 Grilled Veggie & Halloumi Power Bowl

🌿 Ingredients:

  • 1 cup cooked quinoa or couscous

  • 1 zucchini, sliced

  • 1 red bell pepper, sliced

  • 1 small eggplant, sliced

  • 1 carrot, julienned

  • 100g halloumi cheese, sliced

  • 2 tbsp olive oil

  • 1 tsp paprika

  • Salt & black pepper to taste

  • Fresh parsley for garnish

  • Optional: hummus or tahini drizzle


🔥 Instructions:

  1. Preheat grill or pan over medium heat.

  2. Toss zucchini, bell pepper, eggplant, and carrot in olive oil, paprika, salt, and pepper.

  3. Grill or pan-fry veggies for 5–7 minutes until tender and slightly charred.

  4. In the same pan, grill halloumi slices until golden on each side.

  5. Assemble bowl: layer quinoa at the base, top with grilled veggies and halloumi.

  6. Drizzle with tahini or add a spoonful of hummus. Garnish with parsley.
