Creamy Vegan Mushroom Stroganoff

Ingredients:

250g mushrooms (cremini or button), sliced

1 small onion, finely chopped

2 garlic cloves, minced

2 tbsp olive oil

1 tsp smoked paprika
-
1 tbsp soy sauce or tamari
-
½ cup vegetable broth
-
1 cup canned coconut milk or unsweetened plant-based cream
-
2 tsp cornstarch mixed with 2 tbsp water (optional, for thickening)

Salt & pepper to taste

Fresh parsley, chopped (for garnish)

Cooked pasta, rice, or mashed potatoes (to serve)
Instructions:

Heat olive oil in a large pan. Add onions and garlic, cook until translucent.

Add mushrooms, paprika, and soy sauce. Cook until mushrooms release moisture and begin to brown.

Pour in the broth and coconut milk. Simmer for 5–7 mins.

If needed, stir in cornstarch mix to thicken the sauce.

Season with salt and pepper. Serve over pasta, rice, or mashed potatoes.
