  Creamy Vegan Chickpea & Spinach Curry

Ingredients:

  • 1 tbsp coconut oil

  • 1 onion, finely chopped

  • 2 garlic cloves, minced

  • 1 tbsp grated fresh ginger

  • 1 tsp ground turmeric

  • 1 tsp ground cumin

  • 1 tsp garam masala

  • 1 can (400g) chickpeas, drained

  • 1 can (400ml) coconut milk

  • 2 cups fresh spinach

  • Salt & pepper to taste

  • Optional: Fresh cilantro and lemon wedges for garnish

Instructions:

  1. Heat coconut oil in a pan over medium heat. Sauté onion until soft.

  2. Add garlic and ginger; cook for 1 minute.

  3. Stir in turmeric, cumin, and garam masala.

  4. Add chickpeas and coconut milk. Simmer for 10–12 minutes.

  5. Toss in spinach, cook until wilted.

  6. Season with salt and pepper. Serve hot with rice or flatbread.
