Spicy Vegan Pancit Canton

🍜 Ingredients:
For the Noodles & Veggies:

200g pancit canton noodles (check for egg-free if vegan)

1 tbsp sesame oil or vegetable oil

3 cloves garlic (minced)

1 small onion (sliced)

1 small carrot (julienned)

½ cup green beans or snow peas

½ cup shredded cabbage
-
½ cup sliced mushrooms or tofu strips (optional protein)

2 tbsp soy sauce (or coconut aminos)

1 tbsp vegan oyster sauce (or hoisin)

1 tsp chili garlic sauce (adjust to spice level)

¼ cup water or veggie broth
Optional Toppings:

Calamansi or lemon wedges

Chopped green onions

Fried garlic

Chili flakes
🍳 Instructions:

Boil the Noodles:
Cook pancit canton noodles as per instructions. Drain and set aside. -
Stir-Fry the Veggies:
Heat oil in a pan. Sauté garlic and onion until fragrant. Add carrots, green beans, mushrooms/tofu, and cabbage. Stir-fry for 3–4 mins until tender-crisp. -
Sauce it Up:
Add soy sauce, vegan oyster sauce, chili garlic sauce, and water/veggie broth. Stir to combine. -
Mix in Noodles:
Add cooked noodles to the pan. Toss well until everything is coated in the sauce and heated through. -
Finish & Serve:
Serve hot with calamansi, green onions, fried garlic, or more chili for extra heat 🔥
