🍜 Ingredients:

For the Noodles & Veggies:

  • 200g pancit canton noodles (check for egg-free if vegan)

  • 1 tbsp sesame oil or vegetable oil

  • 3 cloves garlic (minced)

  • 1 small onion (sliced)

  • 1 small carrot (julienned)

  • ½ cup green beans or snow peas

  • ½ cup shredded cabbage

  • ½ cup sliced mushrooms or tofu strips (optional protein)

  • 2 tbsp soy sauce (or coconut aminos)

  • 1 tbsp vegan oyster sauce (or hoisin)

  • 1 tsp chili garlic sauce (adjust to spice level)

  • ¼ cup water or veggie broth

Optional Toppings:

  • Calamansi or lemon wedges

  • Chopped green onions

  • Fried garlic

  • Chili flakes


🍳 Instructions:

  1. Boil the Noodles:
    Cook pancit canton noodles as per instructions. Drain and set aside.

  2. Stir-Fry the Veggies:
    Heat oil in a pan. Sauté garlic and onion until fragrant. Add carrots, green beans, mushrooms/tofu, and cabbage. Stir-fry for 3–4 mins until tender-crisp.

  3. Sauce it Up:
    Add soy sauce, vegan oyster sauce, chili garlic sauce, and water/veggie broth. Stir to combine.

  4. Mix in Noodles:
    Add cooked noodles to the pan. Toss well until everything is coated in the sauce and heated through.

  5. Finish & Serve:
    Serve hot with calamansi, green onions, fried garlic, or more chili for extra heat 🔥
