🥗 Ingredients:

  • 2 slices whole grain or sourdough bread

  • 1 medium sweet potato, peeled and thinly sliced

  • 1 ripe avocado

  • 1 tsp olive oil

  • Pinch of salt, pepper, and paprika (optional)

  • 1 tsp lemon juice

  • Optional toppings: cherry tomatoes, arugula, sesame seeds, chili flakes


🔥 Instructions:

  1. Preheat oven to 200°C (400°F).

  2. Place sweet potato slices on a baking sheet, brush lightly with olive oil, and sprinkle with salt and paprika.

  3. Bake for about 10-12 minutes, until soft and slightly golden.

  4. Meanwhile, toast the bread slices.

  5. In a bowl, mash the avocado with lemon juice, salt, and pepper.

  6. Spread the mashed avocado on toast, layer with warm sweet potato slices, and add any extra toppings you like.
